Creamy Chocolate Potato Pudding

This creamy chocolate pudding is made from simple whole-food ingredients — potatoes for natural creaminess, dates for gentle sweetness, and cocoa for rich chocolate flavor. It’s smooth, comforting, and surprisingly delicious, proving that healthy desserts don’t need complicated ingredients to feel indulgent.

Ingredients

4 small cooked potatoes (250 g)
3 soft dates , pitted (Medjool)
1 tsp vanilla extract
pinch of salt
2 tbsp cocoa powder
1 tbsp maple syrup
120 ml milk (plant based)

Instructions

1. Soak the dates in hot water for 20 minutes.
2. Drain the water.
3. Add all ingredients to a blender.
4. Blend until completely smooth and creamy, adding a little more milk if needed.
5. Taste and adjust sweetness if desired.
6. Chill for at least 30 minutes before serving for best texture.
