Healthy Caramel Ice Pops
A naturally sweet frozen treat made from chickpeas, dates, almond butter, and vanilla — smooth, dairy-free, and surprisingly delicious.

These creamy popsicles are made from simple whole-food ingredients — chickpeas for natural creaminess, dates for gentle sweetness, almond butter for richness, and a touch of vanilla and maple syrup for that caramel-like flavor. A nourishing frozen treat that’s surprisingly smooth, naturally sweet, and made without refined sugar.
Ingredients
250 g chickpeas, cooked
12 soft dates, pitted (Medjool)
80 g almond butter
1 tsp vanilla extract
1 tbsp maple syrup
120 ml milk (plant based)
Instructions
1. Soak the dates in hot water for 20 minutes.
2. Then drain the water.
3. Add all ingredients to a blender and blend until completely smooth and creamy.
4. Pour into popsicle molds and freeze until solid.
