Mango Coconut Overnight Oats

These mango coconut overnight oats are a simple breakfast that can be prepared the evening before.
The mango chia layer creates a naturally sweet, slightly thick fruit topping that pairs perfectly with the creamy oats and coconut.
Frozen mango works very well for this recipe and makes it easy to prepare year-round.
Ingredients (2 servings)
1 cup mango (fresh or frozen)
1 tbsp chia seeds
1 cup rolled oats
1 cup plant milk
1 tbsp maple syrup
2 tbsp coconut yogurt (optional)
2 tbsp shredded coconut
For topping:
mango cubes and additional shredded coconut
Instructions
1. Cut the mango in pieces or, if using frozen, heat the mango in a small saucepan over low heat until soft. Alternatively, warm it in the microwave for about 2–3 minutes.
2. Mash the mango with a fork or blend briefly until smooth.
3. Stir in the chia seeds and let the mixture sit for about 5 minutes so it can thicken.
4. In a bowl, combine the oats, plant milk, coconut yogurt, and shredded coconut. Stir well.
5. Layer the oat mixture and the mango chia mixture in a jar or glass.
6. Cover and place in the refrigerator for at least 2 hours, preferably overnight.
7. The next morning, you can top with fresh mango cubes and extra coconut before serving.
