Smoky Black Bean & Walnut Burgers

These hearty black bean burgers are made from simple whole-food ingredients — black beans, oats, walnuts, and mushrooms for a rich, savory flavor and satisfying texture. Crispy on the outside and tender inside, they’re perfect for easy weeknight meals or relaxed weekend cooking.

Ingredients

3 tbsp flaxseed
250 g black beans (canned, drained and rinsed)
70 g rolled oats
1 tsp thyme, dried
1 tsp cumin, ground
1 tbsp soy sauce
2 tbsp oil
1 onion
150 g mushrooms, finely chopped
40 g walnuts
1/2 tsp salt


whole wheat buns
tomatoes, sliced
lettuce
your favorite sauces

Instructions

1. Mix the ground flaxseed with 3 tbsp water and let sit for 10 minutes.
2. Spread the black beans on a baking tray and roast at 180°C for 10 minutes.
3. Mash the beans with a fork and mix with oats, soy sauce, thyme, and cumin.
4. Finely chop the onion and sauté in a pan with 1 tbsp oil until soft.
5. Add the chopped mushrooms and cook until tender.
6. Finely chop the walnuts.
7. Add the cooked mushrooms, onion, flax mixture, and walnuts to the bean mixture and combine well.
8. Season with salt to taste.
9. Shape into 4–6 patties and pan-fry with a little oil until golden on both sides.
10. Serve on a whole wheat bun with lettuce, tomato slices and your favorite sauce.
