Spinach Curry with Carrot & Lentil Balls

This meal is built from simple, everyday plant foods.
Red lentils, carrots, oats, and sesame seeds form soft, savory lentil balls, while the spinach curry brings warmth and comfort with gentle spices, onion, garlic, and a bit of coconut milk. A nourishing, satisfying dish made from familiar ingredients — uncomplicated and deeply comforting.

Ingredients

Spinach curry
1 onion
4 cloves garlic, pressed
1 small piece ginger (about 1 cm / 1/2 inch)
600 g frozen, pureed spinach
1 tbsp lemon juice
2 tsp garam masala
1 tsp curry powder
1/2 can coconut milk
1 tbsp oil
salt and black pepper, to taste

Lentil balls
200 g red lentils
3 carrots (about 250 g)
100 g rolled oats
1 tsp mustard
2 tbsp sesame seeds
salt
black pepper
1 tsp garam masala
2 cloves garlic, pressed


Instructions

Lentil balls
1. Preheat the oven to 200 °C (top and bottom heat).
2. Cook the lentils in twice the amount of water until soft, about 15 minutes.
Tip: Do not fully cover the pot, as lentils tend to foam over.
3. While the lentils are cooking, coarsely grate the carrots and mix them with the mustard, sesame seeds, rolled oats, 1 tsp salt, ½ tsp black pepper, garam masala, and the pressed garlic.
4. Remove the cooked lentils from the heat and let them cool slightly.
5. Add the carrot mixture to the lentils and mix well.
6. Using your hands, form small balls and place them on a lightly greased baking tray or one lined with parchment paper.
7. Bake for about 30 minutes at 200 °C, until lightly golden.

Spinach curry
8. Finely chop the onion and sauté it in the oil for a few minutes until translucent.
9. Add the finely chopped ginger and the remaining 4 cloves of garlic, and sauté briefly.
10. Stir in 1 tsp garam masala, then add the pureed spinach and 150 ml water.
11. Simmer gently over low heat until the spinach is completely thawed and heated through.
12. Add the coconut milk, curry powder, and lemon juice.
13. Season with salt and black pepper to taste and simmer briefly.

To serve
Serve the carrot & lentil balls with the spinach curry.
